Carrot Cake Bars with Cream Cheese Swirl

Ingredients
Carrot Cake Bars

  • 1 cup light brown sugar
  • 1 stick unsalted butter melted
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1 cup all purpose flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup shredded carrots

Cheesecake Swirl

  • 4 oz cream cheese room temperature
  • 1/4 cup sugar
  • 1 egg yolk
  • 3/4 tsp vanilla extract

Instructions
Carrot cake bars batter:

  1. Preheat oven to 350 degrees.
  2. Prepare an 8x8 baking pan with nonstick spray and set aside. For easy removal add parchment paper.
  3. Melt the butter in a microwave-safe dish. 
  4. In a medium-sized bowl, add the melted butter and brown sugar and mix to combine. 
  5. Stir in the egg and vanilla. 
  6. Add in the flour, cinnamon, baking powder, and salt and stir again until completely combined. 
  7. Fold in the shredded carrots. Set aside.
